Made with Morning Made Matcha Time 10 mins + 1–2 hours chilling Difficulty Easy Makes 8–10 bars
Ingredients
  • 1 cup almond meal (or almond flour)
  • 1/2 cup vanilla or unflavoured protein powder
  • 2–3 tsp matcha powder (adjust to taste)
  • 1/4 cup nut butter (almond or cashew is best)
  • 1/4 cup honey or maple syrup
  • 1–2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2–4 tbsp milk of choice (only if needed)
Method
  1. Mix the dry ingredients. Combine almond meal, protein powder, matcha and salt in a bowl.
  2. Add the wet ingredients. Add nut butter, honey or maple syrup, coconut oil and vanilla and stir until combined — it will be crumbly at first.
  3. Form the dough. Add milk slowly, a little at a time, until the mixture comes together into a thick dough.
  4. Press. Firmly press the mixture into a lined container or tray.
  5. Top. Sprinkle shredded coconut on top and press in lightly.
  6. Chill. Refrigerate for 1–2 hours until firm.
  7. Slice & store. Cut into bars and keep refrigerated.
