Ingredients
- 1 cup almond meal (or almond flour)
- 1/2 cup vanilla or unflavoured protein powder
- 2–3 tsp matcha powder (adjust to taste)
- 1/4 cup nut butter (almond or cashew is best)
- 1/4 cup honey or maple syrup
- 1–2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- Pinch of salt
- 2–4 tbsp milk of choice (only if needed)
Method
- Mix the dry ingredients. Combine almond meal, protein powder, matcha and salt in a bowl.
- Add the wet ingredients. Add nut butter, honey or maple syrup, coconut oil and vanilla and stir until combined — it will be crumbly at first.
- Form the dough. Add milk slowly, a little at a time, until the mixture comes together into a thick dough.
- Press. Firmly press the mixture into a lined container or tray.
- Top. Sprinkle shredded coconut on top and press in lightly.
- Chill. Refrigerate for 1–2 hours until firm.
- Slice & store. Cut into bars and keep refrigerated.
