Coconut Matcha Protein Balls

Ingredients

  1. 1 cup rolled oats
  2. ½ cup desiccated coconut (plus extra for topping)
  3. 1 scoop (about 30g) vanilla or unflavoured protein powder
  4. 1–2 tsp Morning Made matcha (depending how strong you like it)
  5. 2 tbsp maple syrup
  6. ¼ cup almond butter
  7. 2 tbsp coconut oil, melted
  8. 1 tsp vanilla extract
  9. Pinch of sea salt
  10. 1–2 tbsp milk of choice (only if mixture is too dry)
  11. 100-200g dark chocolate, melted

Method:

  1. Mix all dry ingredients in a bowl or food processor
  2. Add maple syrup, almond butter, vanilla extract and coconut oil until combined
  3. Chill in fridge for 10 minutes
  4. Melt chocolate with ½ tsp coconut oil
  5. Coat protein balls in melt chocolate and sprinkle with coconut to finish
