Made with Unsweetened Matcha Latte Time 20 mins (plus chilling) Difficulty Easy Makes ~12 balls
Ingredients
  • 1 cup rolled oats
  • ½ cup desiccated coconut (plus extra for topping)
  • 1 scoop (about 30 g) vanilla or unflavoured protein powder
  • 1–2 tsp Morning Made Matcha Latte (depending how strong you like it)
  • 2 tbsp maple syrup
  • ¼ cup almond butter
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • 1–2 tbsp milk of choice (only if mixture is too dry)
  • 100–200 g dark chocolate, melted
Method
  1. Combine dry ingredients. In a bowl or food processor, mix rolled oats, desiccated coconut, protein powder, matcha powder, and sea salt.
  2. Add wet ingredients. Add maple syrup, almond butter, vanilla extract, and melted coconut oil. Mix or pulse until well combined. Add milk only if the mixture is too dry.
  3. Chill. Place the mixture in the fridge for 10 minutes to firm up slightly.
  4. Melt the chocolate. Gently melt dark chocolate with ½ tsp coconut oil until smooth.
  5. Coat and finish. Roll the mixture into bite-sized balls, coat in melted chocolate, and sprinkle with desiccated coconut. Chill until set.
