Ingredients
- 1 cup rolled oats
- ½ cup desiccated coconut (plus extra for topping)
- 1 scoop (about 30 g) vanilla or unflavoured protein powder
- 1–2 tsp Morning Made Matcha Latte (depending how strong you like it)
- 2 tbsp maple syrup
- ¼ cup almond butter
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- Pinch of sea salt
- 1–2 tbsp milk of choice (only if mixture is too dry)
- 100–200 g dark chocolate, melted
Method
- Combine dry ingredients. In a bowl or food processor, mix rolled oats, desiccated coconut, protein powder, matcha powder, and sea salt.
- Add wet ingredients. Add maple syrup, almond butter, vanilla extract, and melted coconut oil. Mix or pulse until well combined. Add milk only if the mixture is too dry.
- Chill. Place the mixture in the fridge for 10 minutes to firm up slightly.
- Melt the chocolate. Gently melt dark chocolate with ½ tsp coconut oil until smooth.
- Coat and finish. Roll the mixture into bite-sized balls, coat in melted chocolate, and sprinkle with desiccated coconut. Chill until set.
