Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 cup almond flour
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp Morning Made matcha powder
  • Pinch of salt
  • 4–6 premade croissants (day-old or slightly stale work best)
  • Almond flakes
  • 2 tbsp simple syrup (1:1 sugar & water)

Method

  1. Make the Matcha Almond Filling
  2. In a bowl, beat together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well.
  4. Stir in vanilla, almond flour, matcha powder, and salt until a thick paste forms.
  5. Prep the Croissants
  6. Slice each croissant in half lengthwise (like a sandwich).
  7. Lightly brush the inside with simple syrup to keep them moist and slightly sticky.
  8. Fill and Assemble
  9. Spread 1–2 tablespoons of the matcha almond filling inside each croissant.
  10. Close them, then spread another tablespoon of filling over the top.
  11. Sprinkle with almond flakes.
  12. Bake
  13. Preheat oven to 350°F (175°C).
  14. Place croissants on a lined baking tray.
  15. Bake for 15–18 minutes, or until the tops are lightly browned and the almond filling is set.
  16. Let cool slightly and dust with powdered sugar before serving.
