Ingredients
- Almond Filling
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- 1 cup almond flour
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp Morning Made matcha powder
- Pinch of salt
- For Assembly
- 4–6 premade croissants (day-old or slightly stale work best)
- Almond flakes
- 2 tbsp simple syrup (1:1 sugar & water)
Method
- Make the Matcha Almond Filling. In a bowl, beat together butter and sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in vanilla, almond flour, matcha powder, and salt until a thick paste forms.
- Prep the Croissants. Slice each croissant in half lengthwise (like a sandwich). Lightly brush the inside with simple syrup to keep them moist and slightly sticky.
- Fill and Assemble. Spread 1–2 tablespoons of the matcha almond filling inside each croissant. Close them, then spread another tablespoon of filling over the top. Sprinkle with almond flakes.
- Bake. Preheat oven to 350°F (175°C). Place croissants on a lined baking tray. Bake for 15–18 minutes, or until the tops are lightly browned and the almond filling is set.
- Finish. Cool slightly and dust with powdered sugar before serving.
