Flaky, buttery croissants filled and topped with a rich matcha almond cream, then baked to golden perfection. A vibrant, bakery-style twist on the classic almond croissant (no pastry-making required).
Ingredients
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- 1 cup almond flour
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp Morning Made matcha powder
- Pinch of salt
- 4–6 premade croissants (day-old or slightly stale work best)
- Almond flakes
- 2 tbsp simple syrup (1:1 sugar & water)
Method
- Make the Matcha Almond Filling
- In a bowl, beat together the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well.
- Stir in vanilla, almond flour, matcha powder, and salt until a thick paste forms.
- Prep the Croissants
- Slice each croissant in half lengthwise (like a sandwich).
- Lightly brush the inside with simple syrup to keep them moist and slightly sticky.
- Fill and Assemble
- Spread 1–2 tablespoons of the matcha almond filling inside each croissant.
- Close them, then spread another tablespoon of filling over the top.
- Sprinkle with almond flakes.
- Bake
- Preheat oven to 350°F (175°C).
- Place croissants on a lined baking tray.
- Bake for 15–18 minutes, or until the tops are lightly browned and the almond filling is set.
- Let cool slightly and dust with powdered sugar before serving.
